Does it happen to you, hunger, and unwillingness to cook pop simultaneously?
How many times in the past have you fought traffic to reach home after a stressful day and ended up ordering dinner from Zomato or making Maggi?
Later, that sent you on a guilt trip for eating unhealthy? Happened to infinite times...
During the lockdown, while you are balancing work-from-home and work-for-home, do you feel gloomy to walk into the kitchen in the evenings?
Again happens to me all the time...
One such day, I opened my refrigerator while thinking a quick fix dinner and realized "Today Tomato, no Zomato" (Ok that's a pretty bad joke)
Sharing my version of Quick Fix Recipe of Tomato Omelette
Ingredients:
- Chickpea Flour (Besan) - 1 Cup
- Semolina (Rava) - 1/4th Cup
- Chopped Onion - 1 medium
- Chopped Tomato - 2 medium
- Diced Garlic - 4-5 petals
- Diced Ginger - 1/2 inch
(ginger and garlic can be coarsely ground too) - Chopped Chilli - 1 (more if you like spice)
- Chopped Coriander
- Salt - To Taste
- Turmeric - 1/4 teaspoon
- Chilli Powder - 1/2 teaspoon
- Dhana Jeera Powder - 1/4 teaspoon
- Water
- Oil for greasing the pan
Preparation
- In a large bowl, mix all ingredients and give it a mix
- Add little water at a time to make it into a smooth batter
- Keep aside for 15 minutes
- Grease a pan and let it pre-heat on a medium-low heat
- Once the pan is warm add 1/2 a cup batter to the pan
- Cook until the begins to bubble and the bottom side is golden brown.
- Flip the Omelette and cook until the underside is well cooked
- Repeat the same with remaining batter
