Healthy & Tasty Spinach Soup

Lockdown binge eating is a common phenomenon everywhere... 
My Facebook and Instagram are full of recipes, food photos, and more food discussion. 
I'm very much prone to gaining weight in such a scenario. You know what balances my day's diet in this lockdown binging phase, a bowl full of delicious soup for my dinner - almost every day.
  
I am proud that I can come up with a yummy soup recipe with any available vegetable at home and after a lot of experimentation, I have realized that simple hassle-free soups are the yummiest.  

I promise to share more such easy healthy soup recipes from time to time and put in some tips and tricks for you too... 

Today I am excited to share with you a very easy, tasty, and healthy recipe of Spinach Soup...

Spinach Soup Recipe


Spinach or Palak, this leafy green vegetable is a powerhouse of nutrients and antioxidants.  Believed to have its origin in Persia, spinach may benefit eye health, reduce oxidative stress, reduce blood pressure, and help prevent cancer.   

There are many ways of preparing spinach and here is a healthy soup recipe.

INGREDIENTS
  1. 2 Cups, cleaned & chopped spinach leaves

    Palak Soup Ingredients
  2. 1 Medium, finely chopped onion
  3. 2 Tablespoon, crushed garlic
  4. 2 Tablespoon, Besan/chickpea flour
  5. 1 Bay Leaf
  6. 1 Teaspoon, freshly crushed peppercorns
  7. 1 Teaspoon, ground cumin (more to garnish)
  8. 1/2 Tablespoon spoon oil
  9. 2 Cups of water
  10. Salt to taste
PREPARATION
  • Clean and chop spinach leaves
  • Finely chop onion
  • Peel & Dice garlic
  • Roast and Ground Cumin
  • Crush peppercorns
COOKING
  • Heat oil in a Kadai (Pan) and saute the bay leaf
  • Next, saute the garlic and onion (until translucent) & add spinach and cook well
  • Stir in the Besan and avoid lumps
  • Add salt, pepper & cumin powder
  • Add water and bring to boil 
  • Once cooked properly bring to room temperature
  • Remove the bay leaf (IMPORTANT STEP)
  • Blend with a hand - blender 
  • Simmer on low heat  & ladle the soup in a bowl
  • Garnish the soup with cumin powder and serve
