Cut the Carb with "Pumpkin Soup"

Coming to you with my yet another healthy, easy, and delicious soup recipe... 
What comes to your mind when you think of Pumpkins? - Vegetable, Haloween, pumpkin pie, pumpkin latte? Well, there is more to these orange gourds. Pumpkins have numerous health benefits that never take a center stage...

Are you skeptical of making a "PUMPKIN SOUP"?? - Well, consider the following health benefits and do give it a try... 

Weight gain, impaired vision, immunity have become our challenges during this lockdown - Guess what? Pumpkin treats it all.....

So, let's get started with our Pumpkin Soup

Pumpkin Soup
Healthy Delicious Pumpkin Soup


Ingredients: 
  1. 500 gms (2 cups) Red Pumpkin (Butternut Squash) 
  2. 8-10 almonds (More to garnish)
  3. 2 tablespoons fresh cream
  4. Salt to taste
  5. Black Pepper Powder, Cinnamon 
  6. 3-4 garlic cloves (Optional)
  7. 1 small onion (Optional)
Preparation: 
  • Remove skin and de-seed the pumpkin and cut into small cubes
  • Soak almonds for 30 mins 
Cooking

  • In a deep pot, heat 3 cups of water
  • Add pumpkin cubes and almonds with a pinch of kosher salt and boil on medium heat for 15 minutes or until the pumpkin is cooked well (You can add onion and garlic cloves while boiling)
  • Turn off the heat and let it cool for sometime
  • Puree with a stick blender until smooth
  • Add fresh cream, ground pepper, cinnamon & other herbs you like
  • Heat the soup on medium flame (NEVER BOIL YOUR SOUP - Just warm it)
  • Ladle the soup into the bowls and garnish with fresh cream and roasted almonds and enjoy the soulful treat
