Please Note: that I am neither a chef nor a food expert, but I'm obviously a food lover and all these dishes are the representations of my experiments with ingredients in my spare time... (I might not have videos for properly for now but that issue will soon be fixed)

Whenever I have made pancakes and posted the pictures on my social media, I have got several DMs seeking the recipe of a perfect pancake. After years and years of experimentation with a variety of ingredients, Voila! finally nailed a perfect recipe for fluffy, luscious pancakes .....

In the past, I have worked with eggs, curd, buttermilk, bananas, whole wheat flour, ragi flour, Zucchini, and much more... After multiple successful & failed attempts, came up with this simple recipe for you to try :)

What you need??

  • All-purpose flour: 2 cups (Any other flour like wheat flour or ragi flour are ok to use but will not give that smooth fluffy texture) 
  • Sugar: 3 tablespoons (granulated)
  • Salt: 1/2 tablespoon
  • Baking Powder: 1/2 tablespoon
  • Baking Soda: 1/2 tablespoon

  • Buttermilk: 2 cups (Whisk curd with some water to make buttermilk at home)
  • Eggs: 2 (For fluffier texture, I prefer separating egg white and yolk. You can incorporate them together if this sounds like a task)
  • Butter : 3 tablespoons (melted / unsalted better) - TOO MUCH BUTTER? That's needed for the luscious texture :)

To Serve
  • Butter / Honey / Maple Syrup / Bananas / Chocolate Sause (GO CRAZY!!!!) 


Preparation
  • In a bowl, sift the flour, sugar, salt, baking powder, and baking soda, and whisk to combine
  • In a different bowl, whisk the buttermilk, eggs, and melted butter until smooth
  • Whisk egg whites separately until stiff peaks show up
  • Combine egg whites to the wet ingredients
  • Add the wet mixture to the dry ingredients, gently incorporating with a spatula. (Make sure not to overmix, as that will result in dense pancakes.)
  • Grease a pan with butter or oil and heat  over medium-low heat
  • Once the pan is warm add 1/2 a cup of batter to the pan.
  • Cook until the top side begins to bubble and the bottom is golden brown. Flip the pancake and cook until the underside is golden brown. Repeat with the remaining batter.
